On a Yakut knife, the steel grade decides less than most buyers expect. What does the work is the geometry: an asymmetric blade with a hollowed groove that will not stick in frozen fish or fatty meat. The steel decides something else — how the knife will live in your hands: how often you sharpen it, whether water bothers it, and how much inattention it forgives. Why steel is not the first decision here
An ordinary knife cuts with its edge. A Yakut knife cuts with the edge and the shape: one side of the blade is flat with a shallow groove, the other is a convex lens. The groove breaks the suction, so food releases instead of clinging and the blade leaves the cut clean. No steel grade gives you that — the forged shape does.

Stainless: 40Kh13, 95Kh18 and AUS-8
40Kh13 is the most common stainless steel in Yakut knives — a corrosion-resistant grade specified in GOST 5632-2014. It takes fish, blood and acidic food in stride, does not spot when the blade is put away unwashed, and sharpens easily at home. The trade-off is honest: it holds an edge more modestly, and in exchange it forgives almost everything.
95Kh18 is a step up in edge retention at the same confident corrosion resistance. You sharpen less often, and touching up asks for a little more patience.
AUS-8 — sold in Russia under the name Chrome 8, so you will see both on our product pages — follows the same logic: stainless, predictable, friendly to an owner who would rather not think about the knife after the work is done.
If this is your first Yakut knife and it will live around water, fish or a kitchen, take a stainless one. It removes the only real everyday problem: you forgot to wipe it, and nothing happened.
Kh12MF — when holding the edge matters most
Kh12MF is the hardest of the steels in regular use on Yakut knives — an alloy tool steel specified in GOST 5950-2000. It holds a sharpened edge longer than the others, and you feel that on long work: breaking down several fish, or putting up meat, without going back to the stone.
The price is paid in care and in sharpening. It is semi-stainless: water and blood are better not left on the blade. And it is harder to sharpen — out in the cold without a proper stone, that is no longer as simple as it is with 40Kh13. Kh12MF is at its best when the knife lives in a house or a workshop rather than a month on the trail.
65G — the steel for weeks in the taiga
65G is a plain carbon spring steel, the grade family covered by GOST 14959-2016. It will rust and it will spot — that is its normal behaviour, not a defect. In exchange it sharpens anywhere: on the rim of a ceramic plate, on a suitable stone, on whatever is at hand. Wipe it dry after use and it will serve for decades.
That is exactly why reindeer and horse herders favour it — people who move through the taiga for weeks with no stones and no way to order anything. In that life, “a knife you can true up against anything” beats “a knife that holds its edge longer”. The patina that darkens the blade over time becomes part of how it looks.
What to choose for your use
- Fishing, kitchen, a first Yakut knife — 40Kh13, 95Kh18 or AUS-8. Stainless takes the care question off the table.
- A lot of cutting in one go, knife lives at home — Kh12MF. Sharpen less often, wipe more carefully.
- Long trips, taiga, work without equipment — 65G. Trues up against anything; rust does not stop it working.
- A gift — stainless. Whoever receives it most likely will not want to study care instructions first.
